Ingredients
For the Apple Filling:
- 3 cups Granny Smith apples (peeled, cored, and finely diced)
- ⅓ cup light brown sugar, packed
- 3 tablespoons salted butter
- 1 teaspoon ground cinnamon
For the Cookie Cups:
- 2 cups crushed vanilla wafers
- ¼ cup salted butter, melted and cooled
For the Vanilla Pudding Layer:
- 3.4 ounce instant vanilla pudding mix
- 1 ¼ cup cold whole milk
Additional:
- ¾ cup salted caramel sauce, divided ¼ cup and ½ cup
- 1 cup cold heavy whipping cream
Instructions
- Prepare the Apple Filling: In a skillet, melt 3 tablespoons of butter. Add diced apples, brown sugar, and cinnamon. Cook until apples are tender. Set aside to cool.
- Make the Cookie Cups: Combine crushed vanilla wafers with melted butter. Press mixture into muffin tin cups to form shells. Bake until set and golden. Let them cool.
- Prepare Vanilla Pudding: Whisk vanilla pudding mix with whole milk until thickened. Chill in the refrigerator.
- Assemble the Dessert Cups: Fill each cookie cup with a layer of vanilla pudding, top with apple filling, drizzle with caramel sauce, and finish with a dollop of whipped cream.
- Serve: Drizzle extra caramel sauce over the dessert cups before serving.
