Description

These Apple Caramel Dessert Cups are a delightful treat perfect for any occasion. A luscious combination of sweet caramel, tender apples, and creamy vanilla pudding served in a crunchy cookie cup.


Ingredients

For the Apple Filling:

  • 3 cups Granny Smith apples (peeled, cored, and finely diced)
  • ⅓ cup light brown sugar, packed
  • 3 tablespoons salted butter
  • 1 teaspoon ground cinnamon

For the Cookie Cups:

  • 2 cups crushed vanilla wafers
  • ¼ cup salted butter, melted and cooled

For the Vanilla Pudding Layer:

  • 3.4 ounce instant vanilla pudding mix
  • 1 ¼ cup cold whole milk

Additional:

  • ¾ cup salted caramel sauce, divided ¼ cup and ½ cup
  • 1 cup cold heavy whipping cream

Instructions

  1. Prepare the Apple Filling: In a skillet, melt 3 tablespoons of butter. Add diced apples, brown sugar, and cinnamon. Cook until apples are tender. Set aside to cool.
  2. Make the Cookie Cups: Combine crushed vanilla wafers with melted butter. Press mixture into muffin tin cups to form shells. Bake until set and golden. Let them cool.
  3. Prepare Vanilla Pudding: Whisk vanilla pudding mix with whole milk until thickened. Chill in the refrigerator.
  4. Assemble the Dessert Cups: Fill each cookie cup with a layer of vanilla pudding, top with apple filling, drizzle with caramel sauce, and finish with a dollop of whipped cream.
  5. Serve: Drizzle extra caramel sauce over the dessert cups before serving.
