Ingredients

- 1 teaspoon ground cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Wet Ingredients:
- 1 1/2 cups diced apples (about 2 medium apples)
- 1 cup (240g) Greek yogurt
- 3/4 cup (150g) packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Mix dry ingredients: In a large mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
- Combine wet ingredients: In another bowl, mix Greek yogurt, brown sugar, eggs, and vanilla until smooth.
- Combine wet and dry: Pour wet mixture into dry ingredients, fold together, then add diced apples.
- Fill muffin tin: Scoop batter into muffin tin, filling each cup about 3/4 full.
- Bake: Bake for 18-22 minutes until a toothpick comes out clean.
- Cool: Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
