Description

Soft, sweet banana cookies made with ripe bananas, pantry staples, and optional add-ins like nuts or chocolate chips. These cookies are naturally moist, easy to make in one bowl, and perfect for a quick snack or healthy dessert.


Ingredients

    Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Wet Ingredients:

  • 2 medium ripe bananas, mashed
  • 1/2 cup white sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • Optional:

  • 1/4 cup chopped walnuts
  • For Topping:

  • 1 tablespoon white sugar (for sprinkling)

Instructions

  1. Preheat oven: Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix ingredients: In a large bowl, mash bananas. Stir in sugar, melted butter, egg, flour, baking soda, and salt. Mix until just combined.
  3. Add optional: Fold in walnuts, if using.
  4. Form cookies: Drop dough in 3-tablespoon portions onto prepared baking sheet, spacing them 2–3 inches apart. Sprinkle tops with the remaining 1 tablespoon sugar.
  5. Bake: Bake for 15–20 minutes, or until edges are golden and centers are set.
  6. Cool and serve: Let cool slightly on the baking sheet before transferring to a wire rack.

Notes

  • Use very ripe bananas with brown spots for best flavor and moisture.
  • For chewier cookies, bake closer to 15 minutes. For cakier cookies, add a few minutes.
