Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 medium ripe bananas, mashed
- 1/2 cup white sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/4 cup chopped walnuts

- Preheat oven: Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Mix ingredients: In a large bowl, mash bananas. Stir in sugar, melted butter, egg, flour, baking soda, and salt. Mix until just combined.
- Add optional: Fold in walnuts, if using.
- Form cookies: Drop dough in 3-tablespoon portions onto prepared baking sheet, spacing them 2–3 inches apart. Sprinkle tops with the remaining 1 tablespoon sugar.
- Bake: Bake for 15–20 minutes, or until edges are golden and centers are set.
- Cool and serve: Let cool slightly on the baking sheet before transferring to a wire rack.
Notes
- Use very ripe bananas with brown spots for best flavor and moisture.
- For chewier cookies, bake closer to 15 minutes. For cakier cookies, add a few minutes.
