Description

This busy day soup is a comforting and hearty dish that combines seasoned ground beef, a variety of vegetables, and pasta noodles in a flavorful broth. It’s a simple and satisfying meal that’s perfect for busy weeknights.

Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (93% lean)
  • 1 packet onion mushroom soup mix (1.8 ounces)
  • 2 cups water
  • 4 cups low-sodium vegetable broth
  • 15.25 ounces whole kernel corn, drained
  • 14.5 ounces cut green beans, drained
  • 14.5 ounces peas and carrots, drained
  • 14.5 ounces petite diced tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 pound dry elbow pasta noodles

Instructions

  1. Brown the Ground Beef: In a large stockpot, brown the ground beef in olive oil until no longer pink. Drain excess fat.
  2. Prepare Soup Base: Mix onion mushroom soup mix with water and add to the pot. Stir in vegetable broth, corn, green beans, peas & carrots, diced tomatoes, salt, and pepper.
  3. Simmer: Cook the soup on medium heat for 20 minutes, stirring occasionally.
  4. Add Pasta: Stir in dry pasta noodles and cook for an additional 10-13 minutes until noodles are tender.
  5. Serve: Enjoy the soup hot, adjusting salt to taste if needed.

Notes

  • Opt for low-sodium broths and canned vegetables to control salt levels.
  • Cook ground beef ahead for convenience.
  • Best served immediately to prevent noodles from overcooking.
