Ingredients

- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp onion powder

- 1/4 tsp black pepper
Additional Ingredients:
- 6 small flour tortillas
- 1.5 cups cheddar cheese, grated
- 1.5 cups Monterey Jack cheese, grated
Instructions
- Prepare Spice Mix: In a small bowl, mix paprika, cumin, garlic powder, oregano, salt, onion powder, cayenne pepper, and black pepper.
- Sauté Vegetables: Heat olive oil in a large frying pan over medium heat. Sauté diced onion and red pepper until soft.
- Cook Ground Beef: Add ground beef to the pan and cook until browned. Stir in the spice mix and tomato puree.
- Add Beans: Deglaze the pan with water or beef stock. Stir in black beans and simmer until thickened.
- Assemble Quesadillas: Cool the mixture before filling tortillas with beef mixture and cheese.
- Cook Quesadillas: Cook each quesadilla in a heated pan until golden brown on both sides.
