Description

Cheesy Ground Beef Quesadillas are a quick and flavorful meal, perfect for any occasion. This recipe combines seasoned ground beef, melty cheeses, and black beans for a satisfying dish.

Ingredients

Ground Beef Mixture:

  • 1 lb lean minced ground beef
  • 1/2 can black beans (drained)
  • 1 small red pepper, finely diced
  • 1 small white onion, finely diced
  • 1 heaped tbsp tomato puree
  • 1 tsp cornstarch (optional)
  • Olive oil (as needed)
  • 1/2 cup water or low sodium beef stock

Spice Mix:

  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust for spice preference)
  • 1/4 tsp black pepper

Additional Ingredients:

  • 6 small flour tortillas
  • 1.5 cups cheddar cheese, grated
  • 1.5 cups Monterey Jack cheese, grated

Instructions

  1. Prepare Spice Mix: In a small bowl, mix paprika, cumin, garlic powder, oregano, salt, onion powder, cayenne pepper, and black pepper.
  2. Sauté Vegetables: Heat olive oil in a large frying pan over medium heat. Sauté diced onion and red pepper until soft.
  3. Cook Ground Beef: Add ground beef to the pan and cook until browned. Stir in the spice mix and tomato puree.
  4. Add Beans: Deglaze the pan with water or beef stock. Stir in black beans and simmer until thickened.
  5. Assemble Quesadillas: Cool the mixture before filling tortillas with beef mixture and cheese.
  6. Cook Quesadillas: Cook each quesadilla in a heated pan until golden brown on both sides.

Notes

  • For gluten-free quesadillas, use gluten-free tortillas.
  • Feel free to add other vegetables like spinach or mushrooms.
  • Ensure the pan is hot before cooking quesadillas for a golden crust.
  • Do not overfill the tortillas to ensure easy folding and even cooking.
  • Let quesadillas rest for a minute before cutting to allow cheese to set.
