This hearty chicken and rice soup is a comforting dish that is perfect for a chilly day. Packed with tender chicken, aromatic vegetables, and fluffy rice, this soup is a satisfying meal that the whole family will love.
Ingredients
Vegetables:
- 1½ cups yellow onion, diced
- 1½ cups celery, sliced
- 1½ cups carrot, sliced
Other Ingredients:
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 2 pounds bone-in, skin-on chicken (drumsticks and/or thighs)
- ½ teaspoon black pepper
- 3–4 sprigs fresh thyme
- 1 sprig fresh rosemary
- Small bunch parsley
- 6 cups chicken broth
- 1 cup white rice (basmati)
Instructions
- Saute Vegetables: In a large stockpot, saute onion and celery in olive oil until soft and translucent.
- Add Ingredients: Add carrots, chicken, pepper, and herbs to the pot.
- Cook: Cover with broth/water, bring to a boil, then simmer for 30 minutes.
- Add Rice: Add rice and continue simmering for another 10 minutes.
- Shred Chicken: Remove chicken, shred meat, and return to the pot.
- Season and Serve: Season with salt and pepper to taste before serving.
Notes
- If using water or additional broth, adjust salt accordingly.
- Avoid lifting the lid while rice is cooking.
- Simmering longer enhances flavor but adjust liquid and rice accordingly.
- Sprinkle parmesan cheese on top for added flavor.
