- 2 lbs boneless skinless chicken, sliced into strips
- 2 bell peppers (red/yellow), sliced
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 packet fajita seasoning or homemade
- 1 can diced tomatoes (14.5 oz), drained
- 1 cup chicken broth
- 8 oz cream cheese, softened
- ½ cup sour cream
- 1 cup cooked rice, optional
- 2 cups Mexican cheese blend, shredded
- ½ cup sharp cheddar cheese, shredded
- ¼ cup cilantro, chopped
- 2 green onions, sliced
Instructions
- Preheat oven to 375°F and grease baking dish. Season chicken with fajita mix. Slice vegetables.
- Sear chicken in hot skillet 3–4 min per side.
- Spread half of cream mix in dish. Layer chicken, veggies, tomatoes, broth, then top with cream mix. Cover with foil.
- Bake covered 20 min. Remove foil, top with cheese, bake uncovered 10–15 min until bubbly. Let rest 5 min.
