  • 2 lbs boneless skinless chicken, sliced into strips
  • 2 bell peppers (red/yellow), sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 packet fajita seasoning or homemade
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • 1 cup cooked rice, optional
  • 2 cups Mexican cheese blend, shredded
  • ½ cup sharp cheddar cheese, shredded
  • ¼ cup cilantro, chopped
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 375°F and grease baking dish. Season chicken with fajita mix. Slice vegetables.
  2. Sear chicken in hot skillet 3–4 min per side.
  3. Spread half of cream mix in dish. Layer chicken, veggies, tomatoes, broth, then top with cream mix. Cover with foil.
  4. Bake covered 20 min. Remove foil, top with cheese, bake uncovered 10–15 min until bubbly. Let rest 5 min.
