Description

This delicious Chicken Scampi recipe features juicy chicken tenders in a creamy garlic sauce with a hint of white wine and cream, served over angel hair pasta. It’s a quick and easy dish perfect for a flavorful dinner.


Ingredients

For the pasta:

  • 8 ounces (225 g) angel hair pasta

For the chicken:

  • 1 ½ pound (650 g) chicken tenderloins
  • ½ cup (60 g) all-purpose flour
  • ¼ teaspoon Italian seasoning
  • 2 teaspoon salt, divided
  • ¼ teaspoon ground black pepper
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (28 g) butter

For the sauce:

  • 1 medium red onion, sliced into half-moons
  • ½ medium red bell pepper, thinly sliced
  • ½ medium yellow bell pepper, thinly sliced
  • ½ medium green bell pepper, thinly sliced
  • 4 cloves garlic, crushed
  • ½ cup (120 ml) dry white wine
  • ½ cup (120 ml) whipping cream
  • ½ cup (43 g) parmesan cheese, grated
  • ¼ teaspoon red chili flakes (optional)
  • 1 teaspoon chopped fresh parsley

Instructions

  1. Cook the pasta: Boil water in a saucepot, add pasta, and cook according to package instructions. Reserve 1 cup of pasta water and drain.
  2. Prepare the chicken: Dredge chicken in seasoned flour. Brown in olive oil, then set aside.
  3. Make the sauce: Cook onions, bell peppers, and garlic. Add wine, reduce. Stir in pasta water, cream, cheese, and seasonings. Add pasta and chicken. Garnish with parsley.

Notes

  • Feel free to use shrimp instead of chicken.
  • If omitting wine, substitute with ¼ cup chicken stock and ¼ cup white grape juice or apple juice.
  • Use dry white wine like pinot grigio for cooking.
  • Serve over zucchini noodles or cauliflower rice for a low-carb option.
