Ingredients
For the pasta:
- 8 ounces (225 g) angel hair pasta
For the chicken:
- 1 ½ pound (650 g) chicken tenderloins
- ½ cup (60 g) all-purpose flour
- ¼ teaspoon Italian seasoning
- 2 teaspoon salt, divided
- ¼ teaspoon ground black pepper
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (28 g) butter
For the sauce:
- 1 medium red onion, sliced into half-moons
- ½ medium red bell pepper, thinly sliced
- ½ medium yellow bell pepper, thinly sliced
- ½ medium green bell pepper, thinly sliced
- 4 cloves garlic, crushed
- ½ cup (120 ml) dry white wine
- ½ cup (120 ml) whipping cream
- ½ cup (43 g) parmesan cheese, grated
- ¼ teaspoon red chili flakes (optional)
- 1 teaspoon chopped fresh parsley
Instructions
- Cook the pasta: Boil water in a saucepot, add pasta, and cook according to package instructions. Reserve 1 cup of pasta water and drain.
- Prepare the chicken: Dredge chicken in seasoned flour. Brown in olive oil, then set aside.
- Make the sauce: Cook onions, bell peppers, and garlic. Add wine, reduce. Stir in pasta water, cream, cheese, and seasonings. Add pasta and chicken. Garnish with parsley.
Notes
- Feel free to use shrimp instead of chicken.
- If omitting wine, substitute with ¼ cup chicken stock and ¼ cup white grape juice or apple juice.
- Use dry white wine like pinot grigio for cooking.
- Serve over zucchini noodles or cauliflower rice for a low-carb option.
