Description

This Chicken, Spinach, and Mushroom Low Carb Oven Dish is a flavorful and satisfying meal that’s easy to prepare. Tender chicken breasts are layered with fresh baby spinach, sliced mushrooms, and a creamy green onion cream cheese sauce, then topped with melted mozzarella cheese. Perfect for a cozy dinner at home!


Ingredients

For the dish:

  • 1 small bag fresh baby spinach
  • 1 dash pepper
  • 1 dash Herb and Garlic Seasoning
  • 8 oz shredded mozzarella cheese
  • 6 thin sliced chicken breasts
  • 1 container green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 Large package sliced mushrooms

Instructions

  1. Prepare the dish: In a 9×13 pan, lay out chicken in a single layer. Top with spinach and mushrooms. Sprinkle pepper and Herb and Garlic Seasoning over the top.
  2. Make the sauce: Soften cream cheese and whisk in olive oil and chicken broth. Pour the mixture over the chicken and vegetables. Cover the pan with foil, leaving it slightly open.
  3. Bake: Bake at 375°F for 20 minutes. Remove the foil and bake uncovered for an additional 20-25 minutes. Sprinkle mozzarella cheese on top and bake for another 10 minutes or until the cheese is starting to brown.
  4. Serve: Let the dish cool for 10 minutes before serving.
