Ingredients
For the Chicken:
- 1 lb chicken breast tenderloins

- 1 tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
For the Orzo:
- 1 tbsp olive oil
- 5 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup orzo, uncooked
- 2 cups chicken stock
- ¼ tsp salt
- 4 oz fresh spinach
- ½ cup heavy cream
- 1 tbsp dried basil
- ¼ tsp red pepper flakes
- 2 tbsp grated parmesan
Instructions
- Prepare the Chicken: Season chicken with paprika, Italian seasoning, salt, and pepper. Sear in olive oil until golden. Remove from skillet.
- Cook the Orzo: In the same skillet, sauté garlic, sun-dried tomatoes, and orzo. Add chicken stock, salt, and cook until orzo is tender.
- Finish the Dish: Stir in spinach, heavy cream, basil, and red pepper flakes. Return chicken to the pan to heat through. Top with parmesan before serving.
