Creamy Tuscan Keto Meatballs – A delicious low-carb dish featuring tender meatballs in a rich, creamy sauce with spinach and sun-dried tomatoes.


Ingredients

For the Meatballs:

  • 1 lb ground chicken or turkey
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

For the Sauce:

  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meatballs: In a large bowl, mix ground chicken or turkey, almond flour, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Form into meatballs.
  2. Cook the Meatballs: Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through. Remove and set aside.
  3. Make the Sauce: In the same skillet, combine heavy cream, sun-dried tomatoes, spinach, and Parmesan cheese. Cook until spinach wilts and sauce thickens.
  4. Combine and Simmer: Return meatballs to the skillet. Simmer in the sauce for a few minutes.
