Ingredients
For the Meatballs:
- 1 lb ground chicken or turkey
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
For the Sauce:
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Prepare the Meatballs: In a large bowl, mix ground chicken or turkey, almond flour, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Form into meatballs.
- Cook the Meatballs: Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through. Remove and set aside.
- Make the Sauce: In the same skillet, combine heavy cream, sun-dried tomatoes, spinach, and Parmesan cheese. Cook until spinach wilts and sauce thickens.
- Combine and Simmer: Return meatballs to the skillet. Simmer in the sauce for a few minutes.
