Description

Ingredients

Coating and Asparagus

  • 500 g fresh asparagus spears, trimmed
  • 60 g all-purpose flour
  • 2 large eggs, beaten
  • 100 g panko breadcrumbs
  • 60 g grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray or 2 tablespoons olive oil

Instructions

  1. Preheat the oven: Preheat the oven to 220°C and line a baking sheet with parchment paper.
  2. Prepare the coating stations: Place all-purpose flour in a shallow dish, beaten eggs in a separate shallow dish, and combine panko breadcrumbs, grated Parmesan, garlic powder, salt, and black pepper in a third shallow dish.
  3. Coat the asparagus: Dredge each asparagus spear in flour, shake off excess, dip into beaten eggs, and then roll in the breadcrumb mixture, pressing gently to adhere.
  4. Bake the asparagus: Place coated asparagus spears in a single layer on the prepared baking sheet. Lightly spray with cooking spray or drizzle with olive oil for crisping. Bake for 10 to 12 minutes until tender and golden.
