Description

This crock pot King Ranch chicken is a cheesy, Tex-Mex casserole made easy! Perfect for busy weeknights and full of comforting flavor.


Ingredients

For the Chicken Mixture:

  • 4 cups cooked chicken, chopped
  • 1 large white onion, chopped
  • 1 large green bell pepper, chopped
  • 21.5 ounces Cream of Onion soup (two 10.75 ounce cans)
  • 10 ounces Ro-Tel tomatoes & chiles
  • 1 teaspoon chili powder
  • 1 teaspoon minced garlic
  • 2 cups shredded Cheddar cheese

Additional Ingredients:

  • 12 6″ corn tortillas, sliced into 1” pieces

Instructions

  1. Mix Chicken Mixture: In a large mixing bowl, combine the chopped chicken, onion, green pepper, soups, Ro-Tel, chili powder, garlic, and cheese.
  2. Slice Tortillas: Cut the corn tortillas into 1″ pieces.
  3. Layer Ingredients: Lightly grease the slow cooker. Layer one-third of the tortilla pieces, followed by one-third of the chicken mixture. Repeat layers twice. Top with additional cheese.
  4. Cook: Cover and cook on LOW for 3.5 hours. Uncover and cook an additional 30 minutes for a baked texture.

  • Prepare this dish ahead of time for convenience.
  • Use non-stick spray or a liner in the slow cooker to prevent sticking.
  • Omit the top layer of cheese if desired.
