Description
This crock pot King Ranch chicken is a cheesy, Tex-Mex casserole made easy! Perfect for busy weeknights and full of comforting flavor.
Ingredients
For the Chicken Mixture:
- 4 cups cooked chicken, chopped
- 1 large white onion, chopped
- 1 large green bell pepper, chopped
- 21.5 ounces Cream of Onion soup (two 10.75 ounce cans)
- 10 ounces Ro-Tel tomatoes & chiles
- 1 teaspoon chili powder
- 1 teaspoon minced garlic
- 2 cups shredded Cheddar cheese
Additional Ingredients:
- 12 6″ corn tortillas, sliced into 1” pieces
Instructions
- Mix Chicken Mixture: In a large mixing bowl, combine the chopped chicken, onion, green pepper, soups, Ro-Tel, chili powder, garlic, and cheese.
- Slice Tortillas: Cut the corn tortillas into 1″ pieces.
- Layer Ingredients: Lightly grease the slow cooker. Layer one-third of the tortilla pieces, followed by one-third of the chicken mixture. Repeat layers twice. Top with additional cheese.
- Cook: Cover and cook on LOW for 3.5 hours. Uncover and cook an additional 30 minutes for a baked texture.
Notes
- Prepare this dish ahead of time for convenience.
- Use non-stick spray or a liner in the slow cooker to prevent sticking.
- Omit the top layer of cheese if desired.
- Grate fresh cheese for better melting.
