Ingredients
Ground Beef Mixture:
- 2 lb ground beef
- 1 medium onion, diced
- 3 tsp garlic, minced
Stew Base:
- 3½ cups beef broth
- 1 tbsp Worcestershire sauce
- 5 carrots, cut into bite-size pieces
- 1 lb russet potatoes, washed, skinned, and cut into pieces
- 6 oz tomato paste
- 1 tsp black pepper
- 1 tsp salt
- ½ tsp dried rosemary
- ½ tsp dried thyme
- 2 bay leaves
Thickening Agent:
- ¼ cups cold water
- 3 tbsp cornstarch
Instructions
- Brown Ground Beef: In a large skillet over medium-high heat, cook ground beef until fully browned, about 6-7 minutes. Drain and transfer to a 6-quart crock pot.
- Combine Ingredients: Add onion, garlic, beef broth, Worcestershire sauce, carrots, potatoes, tomato paste, black pepper, salt, rosemary, thyme, and bay leaves.
- Cook: Cover and cook on low for 8-9 hours or on high for 4-5 hours.
- Thicken: Whisk cold water and cornstarch until smooth. Pour into the stew, mix, and continue cooking for 10 minutes until thickened.
- Serve: Remove bay leaves before serving.
