These Chipotle Honey Pot Roast Tacos are a delicious and easy-to-make dish that can be prepared in the oven or a crockpot. The flavorful and tender beef, combined with spicy chipotle and sweet honey, is served in warm taco shells with fresh toppings for a satisfying meal.
Ingredients
For the Pot Roast:
- 2 yellow onions, sliced
- 2 tbsp chili powder
- 1 tbsp chipotle chile powder
- 1 tbsp smoked paprika
- 1 tbsp ground cumin
- 1 tbsp garlic powder
- 1 tbsp dried oregano
- 1 tsp pink Himalayan salt
- 1 (4 lb) chuck roast
- 1 cup fresh orange juice
- 1 tbsp honey
- 1 cup salsa verde
For Serving:
- 12 hard or soft taco shells, warmed
- Cilantro
- Green onion
- Avocado
- Cotija cheese, crumbled
Instructions
- Oven: Preheat the oven to 325°F.
- Crockpot: Place onions in crockpot. 3. Rub roast with spice mix, place on onions, add orange juice and honey, cook on LOW for 5 hours or on HIGH for 3 hours. 4. Shred meat. 5. Mix salsa verde with braising sauce. 6. Fill taco shells with beef, onions, cilantro, avocado, cheese, and salsa verde.
2. Arrange onions in a Dutch oven. 3. Rub roast with spice mix, place on onions, add orange juice and honey, roast covered for 2 1/2 to 3 hours. 4. Increase oven to 425°F, cook uncovered for 10 minutes. Shred meat. 5. Mix salsa verde with braising sauce. 6. Fill taco shells with beef, onions, cilantro, avocado, cheese, and salsa verde.
