Ingredients
For the Crockpot:
- 3–4 yellow onions, thinly sliced
- 6 tbsp salted butter
- 1 ½ lb boneless chicken breasts or thighs
- 2 tbsp fresh thyme leaves
- 2 tbsp chopped fresh sage
- Kosher salt and black pepper
- 3 cloves garlic, chopped
- 1 cup dry white wine
- 1 cup chicken or vegetable broth
- 2 cups sliced mushrooms
- 2 cups dry orzo pasta
- ½ cup heavy cream
- ½ cup grated parmesan cheese
- 1 cup shredded gruyere cheese
Instructions
- Crockpot: In the slow cooker, layer onions, butter, and chicken. Season with thyme, sage, garlic, salt, and pepper. Pour wine and broth, add mushrooms. Cook on low for 3-4 hours or high for 1-2 hours.
- Preheat broiler. Remove chicken and onions, place on a baking sheet. Increase slow cooker heat. Stir in orzo and water, cook until al dente. Add cream and parmesan. Top onions with butter, gruyere, broil until melted.
- Serve chicken and onions over orzo.
- Stove Top: Cook onions and butter in a pot. Add chicken, thyme, sage, garlic, salt, pepper, wine, broth, mushrooms. Simmer until chicken is cooked. Finish as per Crockpot method.
