Ingredients
Chicken:
- 1½ pounds chicken breast, cut into bite-size pieces
Orange Sauce:
- ½ cup orange marmalade
- ¼ cup ketchup
- 1 tablespoon brown sugar
- 1 tablespoon rice wine vinegar
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon grated fresh ginger or ½ teaspoon dried
- ¼ to ½ teaspoon red pepper flakes
- ¼ cup water
- 2 tablespoons cornstarch
Garnish:
- White sesame seeds (optional)
- Chopped green onion (optional)
Instructions
- Add chicken pieces to crockpot.
- Cook on low for 4 hours or high for 2 hours.
- Mix water and cornstarch; add to crockpot during the last 10 minutes of cooking to thicken the sauce.
- Serve over rice, garnish with sesame seeds and green onion.
In a bowl, mix the orange marmalade, ketchup, brown sugar, vinegar, soy sauce, ginger, and red pepper flakes. Pour over the chicken.
Notes
- If you prefer more spice, add extra red pepper flakes for heat without overpowering the sauce.
- Don’t forget to spoon out the remaining sauce from the slow cooker to drizzle over the chicken and rice for extra flavor.
