Description

This easy Apple Cider Donut Bread recipe combines the flavors of a cider donut into a moist and flavorful loaf. Coated in a cinnamon-sugar topping, it’s perfect for fall mornings or as a sweet treat any time of day.

Ingredients

For the Apple Cider Donut Loaf

  • 1/2 cup apple cider
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 3 Tablespoons plain Greek yogurt
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

For the Topping

  • 1/4 cup granulated sugar
  • 1/2 Tablespoon ground cinnamon
  • 2 Tablespoons unsalted butter, melted

Instructions

  1. For the Apple Cider Donut Loaf Preheat the oven and prepare the pan. Reduce apple cider. Cream butter and sugar. Add vanilla and eggs. Combine applesauce, yogurt, and cider. Mix dry ingredients. Combine wet and dry mixtures. Bake the loaf.
  2. For the Topping Mix sugar and cinnamon. Coat the loaf with melted butter and cinnamon sugar mixture. Slice and serve.

Notes

  • Recipe makes one 9×5 loaf, serving 8-16 depending on slice size.
  • Reducing apple cider intensifies flavor; skip if desired, aiming for 1/4 cup cider.
  • Vanilla Greek yogurt can be used instead of plain.
  • Apple or pumpkin pie spice can replace cinnamon and nutmeg.
  • For cinnamon sugar coating, press mixture onto buttered bread with parchment paper.
  • For variation, add diced apples, walnuts, or pecans. Store leftovers at room temp for up to 3 days. Freeze up to 3 months.
