Description

Easy Chicken & Dumplings is a classic comfort food dish that combines tender chicken, vegetables, and fluffy dumplings in a savory broth. This simple recipe can be made in just one pot, perfect for a quick and satisfying meal.


Ingredients

For the Chicken and Vegetables:

  • 1.5 pounds boneless skinless chicken breasts or tenders, cut into pieces
  • 1 Tablespoon olive oil
  • 2 Tablespoons butter
  • 34 medium red skin potatoes, diced
  • 2 medium carrots, peeled and diced or thinly sliced
  • 1 medium onion, chopped
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon poultry seasoning
  • 2 Tablespoons all-purpose flour
  • 1 quart chicken stock

For the Dumplings:

  • 8 ounces Jiffy buttermilk biscuit mix
  • 1/2 cup warm water
  • Parsley
  • 1 cup frozen green peas

Instructions

  1. Dice the chicken: Cut the chicken into bite-sized pieces, season with salt and pepper, and set aside.
  2. Cook the vegetables: In a large pot over medium-high heat, combine oil, butter, vegetables, bay leaf, salt, pepper, and poultry seasoning. Cook for 5 minutes, stirring frequently.
  3. Add flour: Sprinkle flour over the vegetables and cook for an additional 2 minutes, stirring constantly.
  4. Prepare the broth: Pour in the chicken stock and bring to a boil. Add the seasoned chicken to the pot and stir.
  5. Make the dumplings: In a bowl, mix the biscuit mix, warm water, and parsley until combined. Drop spoonfuls of the mixture into the pot.
  6. Steam the dumplings: Cover the pot and simmer on medium-low heat for 8-10 minutes to cook the dumplings.
  7. Finish and serve: Uncover the pot, stir in the peas, and remove from heat. Serve hot and enjoy!

Notes

  • Use pre-cooked or rotisserie chicken for a quicker meal.
  • Potatoes can be peeled or unpeeled, just make sure to scrub them well.
