Ingredients
Spaghetti:
- 250 g (½ lb) uncooked spaghetti
Fresh Tomatoes:
- 500 g (1 lb) fresh tomatoes, chopped (or 1 x 400 g tin of chopped tomatoes)
Oil and Aromatics:
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, finely chopped
Stock and Cream:
- 500 ml (2 cups) chicken or vegetable stock
- 150 ml (¾ cup) double cream
Fresh Basil:
- ½ bunch fresh basil
Instructions
- Heat the Oil: In a skillet, heat olive oil over medium heat for 2 minutes.
- Sauté Aromatics: Add onion and garlic, sauté until soft.
- Cook Tomatoes: Add tomatoes, cook until caramelized.
- Add Stock and Pasta: Pour in stock, add spaghetti.
