Description

Monterey Chicken Spaghetti is a comforting and flavor-packed pasta dish that combines tender chicken, creamy Monterey Jack cheese, and perfectly cooked spaghetti in a rich, flavorful sauce.

Ingredients

For the Monterey Chicken Spaghetti:

  • 12 ounces spaghetti, cooked al dente
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti: Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Cook the chicken: Season chicken pieces with paprika, Italian seasoning, salt, and pepper. Cook in a skillet until golden brown and fully cooked. Remove and set aside.
  3. Prepare the sauce: In the same skillet, cook onion until softened. Add garlic, then pour in chicken broth and heavy cream. Simmer until slightly thickened.
  4. Combine and melt cheese: Add cooked spaghetti and chicken back into the skillet. Sprinkle Monterey Jack cheese over the top, cover, and let melt.
  5. Final steps: Garnish with fresh parsley and serve warm.

Notes

  • For extra flavor, consider adding sautéed vegetables like mushrooms, spinach, or bell peppers.
  • If desired, add red pepper flakes or cayenne pepper for a spicy kick.
  • Store leftovers in the refrigerator for up to 3 days and refresh the sauce with a splash of broth or cream when reheating.
  • For added texture, top the dish with toasted breadcrumbs or crushed crackers before serving.
