- 1 to 1 1/4 pounds top sirloin, tri-tip, ribeye, or strip steak
- Kosher salt and freshly ground black pepper, to taste
- 3 tablespoons unsalted butter, divided
- 4 to 6 cloves garlic, chopped
- 1 tablespoon chopped fresh parsley, for garnish, optional

- Cut and season the steak: Cut the steak into pieces, pat dry, sprinkle with salt and pepper.
- Heat the skillet, add butter, then add steak: Heat skillet, add butter, then sear steak bites.
- Sear the steak: Sear steak until browned and cooked to medium doneness.
- Add the remaining butter and garlic: Sauté garlic until cooked through, then add back the steak.
- Transfer the steak bites to a serving dish: Sprinkle with parsley and serve.
Notes
- Make sure not to overcrowd the skillet when searing the steak bites.
