Ingredients
Ground Beef Mixture:
- 16 ounces ground beef
- 1 ½ teaspoons garlic salt

- 2 bay leaves
Soup:
- 6 ½ cups beef broth or stock, low sodium
- 28 ounces diced tomatoes, undrained
- 6 ounces tomato paste
- 2 tablespoons low sodium soy sauce
- 12 ounces frozen mixed vegetables
- 1 ¾ cups macaroni noodles
Garnish:
- Chopped parsley, optional
- Shredded Parmesan cheese
Instructions
- Brown the ground beef: In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease and season with garlic salt, dried basil, and bay leaves. Stir to combine.
- Add soup ingredients: Pour in the beef broth, diced tomatoes, tomato paste, soy sauce, and mixed vegetables. Stir and bring to a boil.
- Cook the macaroni: Add the macaroni noodles and reduce heat to a simmer. Cook covered for 10-15 minutes or until noodles are al dente.
- Garnish and serve: Sprinkle with chopped parsley if desired and serve warm.
