Description

Ingredients

Ground Beef Mixture:

  • 16 ounces ground beef
  • 1 ½ teaspoons garlic salt
  • 1 teaspoon dried basil
  • 2 bay leaves

Soup:

  • 6 ½ cups beef broth or stock, low sodium
  • 28 ounces diced tomatoes, undrained
  • 6 ounces tomato paste
  • 2 tablespoons low sodium soy sauce
  • 12 ounces frozen mixed vegetables
  • 1 ¾ cups macaroni noodles

Garnish:

  • Chopped parsley, optional
  • Shredded Parmesan cheese

Instructions

  1. Brown the ground beef: In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease and season with garlic salt, dried basil, and bay leaves. Stir to combine.
  2. Add soup ingredients: Pour in the beef broth, diced tomatoes, tomato paste, soy sauce, and mixed vegetables. Stir and bring to a boil.
  3. Cook the macaroni: Add the macaroni noodles and reduce heat to a simmer. Cook covered for 10-15 minutes or until noodles are al dente.
  4. Garnish and serve: Sprinkle with chopped parsley if desired and serve warm.
