Ingredients
Baby Potatoes:
- 1.5 lbs (700g) baby potatoes, halved or quartered
Feta Cheese:
- 1 block (7 oz/200g) feta cheese
Cherry Tomatoes:
- 1.5 cups cherry tomatoes, halved
Others:
- 3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon black pepper
Salt to taste (go easy as feta is salty)
Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat and Prep: Preheat the oven to 400°F (200°C). Cut the baby potatoes and prepare the baking dish with vegetables and seasonings.
