Ingredients
Baby Potatoes:
- 1.5 lbs (700g) baby potatoes, halved or quartered
Feta Cheese:
- 1 block (7 oz/200g) feta cheese
Cherry Tomatoes:
- 1.5 cups cherry tomatoes, halved
Other Ingredients:
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- Salt to taste (go easy as feta is salty)
- Fresh basil or parsley, for garnish (optional)
Instructions
- Step 1: Preheat and Prep – Preheat your oven to 400°F (200°C). Wash and cut the baby potatoes and place them in a baking dish with cherry tomatoes, garlic, olive oil, oregano, pepper, and salt.
- Step 2: Add the Feta – Place the feta in the center of the dish and drizzle with olive oil.
