Description

Hillbilly Pie, also known as Poor Man’s Pie, is a simple and delicious dessert that is perfect for any occasion. With a creamy custard filling and a flaky crust, this pie is sure to be a crowd-pleaser.

Ingredients

Pie Crust:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

Filling:

  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon ground nutmeg or cinnamon (optional, for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Place the unbaked pie crust into a 9-inch pie pan and crimp the edges.
  2. Mix Filling: In a large mixing bowl, whisk together the sugar, flour, and salt. Add the milk, beaten eggs, vanilla extract, and melted butter. Stir until smooth and fully combined.
  3. Fill Crust: Pour the filling into the unbaked pie crust.
  4. Add Topping: Sprinkle a light dusting of nutmeg or cinnamon on top for added flavor, if desired.
  5. Bake: Bake for 45–50 minutes, or until the filling is set and slightly golden on top.
  6. Cool and Serve: Let the pie cool completely before slicing. Serve at room temperature or chilled.

Notes

  • Let the pie cool completely before slicing to allow the custard to set properly.
  • For a richer flavor, substitute half-and-half for the milk.
