Ingredients
For the Pretzels:
- 2 (0.25-ounce) packages active dry yeast
- ½ cup plus 1 teaspoon sugar
- 1 ¾ cups warm water (about 100-110° F)
- 5 cups all-purpose flour, plus more for rolling
- 2 teaspoons kosher salt
- 1 tablespoon vegetable oil, plus more for greasing the bowl
For Boiling:
- 9 cups water
- ½ cup baking soda
- Coarse salt, to taste
For Finishing:
- ¼ cup melted butter
Instructions
- Activate Yeast: Combine the yeast, 1 teaspoon of sugar, and warm water in a bowl. Let rest for 10 minutes until foamy.
- Mix Dough: In a stand mixer, combine flour, remaining sugar, and salt. Add oil and yeast mixture. Mix for 5 minutes until smooth.
- Rise Dough: Transfer dough to a greased bowl, cover, and let double in size for 1 hour.
- Prep Boiling Water: Bring water and baking soda to a boil. Divide dough, shape into pretzels, boil briefly, then bake until golden.
- Finish and Serve: Brush warm pretzels with melted butter and enjoy!
