Ingredients

  • 2 (0.25-ounce) packages active dry yeast
  • ½ cup plus 1 teaspoon sugar
  • 1 ¾ cups warm water (about 100-110° F)
  • 5 cups all-purpose flour, plus more for rolling
  • 2 teaspoons kosher salt
  • 1 tablespoon vegetable oil, plus more for greasing the bowl

For Boiling:

  • 9 cups water
  • ½ cup baking soda
  • Coarse salt, to taste

For Finishing:

  • ¼ cup melted butter

Instructions

  1. Activate Yeast: Combine the yeast, 1 teaspoon of sugar, and warm water in a bowl. Let rest for 10 minutes until foamy.
  2. Mix Dough: In a stand mixer, combine flour, remaining sugar, and salt. Add oil and yeast mixture. Mix for 5 minutes until smooth.
  3. Rise Dough: Transfer dough to a greased bowl, cover, and let double in size for 1 hour.
  4. Prep Boiling Water: Bring water and baking soda to a boil. Divide dough, shape into pretzels, boil briefly, then bake until golden.
  5. Finish and Serve: Brush warm pretzels with melted butter and enjoy!
