Description

Ingredients

Beef Tips:

  • 2.5 pounds stew meat or beef tips
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter

Gravy:

  • 1 large Vidalia (sweet) onion, diced to 1”
  • 4 cloves garlic, minced
  • ½ cup dry red or white wine or additional broth
  • 2 cups low sodium beef broth
  • ¼ cup Worcestershire sauce
  • 2 sprigs fresh thyme bundled with kitchen twine
  • 1 whole bay leaf
  • 3 tablespoons cornstarch
  • 3 tablespoons water

Instructions

  1. Prepare the Meat: Pat the meat dry and season with salt and pepper.
  2. Sear the Beef: Sear beef in Instant Pot in batches until browned.
  3. Saute Onions and Garlic: Cook onions and garlic until fragrant.
  4. Deglaze the Pot: Use wine to deglaze and scrape up browned bits.
  5. Pressure Cook: Add broth, Worcestershire sauce, thyme, and bay leaf. Pressure cook for 25 minutes.
  6. Thicken the Gravy: Make a cornstarch slurry and add to the pot. Simmer until thickened.
  7. Serve: Serve beef tips over desired starch.

Notes

  • If stew meat or beef tips are unavailable, use chuck roast or round roast.
  • Ensure the pot is clean to avoid a ‘Burn’ message.
  • If fresh thyme is not available, use 1 tsp dried thyme.
