Description

Ingredients

Meat Mixture:

  • 1 pound lean ground beef
  • 1 pound ground hot Italian sausage, or links with casings removed
  • 1 tablespoon Italian seasoning

Vegetables:

  • 1 medium yellow onion, diced
  • 2 red bell peppers, chopped
  • 4 cloves garlic, minced

Base:

  • 30 ounces fire-roasted diced tomatoes, plus their juices
  • 30 ounces chili beans (with sauce)
  • 30 ounces tomato sauce

Seasonings:

  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 cup chopped flat-leaf Italian parsley
  • 1 pinch kosher salt

For Serving:

  • Pecorino Romano cheese, freshly grated
  • Garlic cheese croutons

Instructions

  1. Cook Meat Mixture: In a Dutch oven over medium-high heat, sprinkle salt. Add beef, sausage, and Italian seasoning. Cook until browned, 8-10 minutes. Drain excess fat.
  2. Add Vegetables: Add peppers and onions, cook until onions are soft. Add garlic, sauté for 30 seconds.
  3. Simmer: Add diced tomatoes, chili beans, tomato sauce, chili powder, and cumin. Simmer for 1 hour on medium-low heat, stirring occasionally.
  4. Finish: Stir in parsley. Serve hot, topped with parsley, Pecorino Romano, and garlic cheese croutons.
