  • 23 pound boneless beef chuck eye roast
  • 1 cup zesty Italian dressing
  • 12 ounce sweet and hot salad peppers, undrained
  • ¼ cup grated parmesan cheese
  • 68 sandwich buns
  • Provolone cheese

Instructions

  1. Place the beef in the slow cooker: Put the beef in the slow cooker and pour the Italian dressing over it.
  2. Add peppers: Pour half the jar of peppers and juice over the meat.
  3. Cook: Cover and cook on LOW for 6 hours or HIGH for 4 hours.
  4. Shred and season: Remove excess juice, shred the meat, then add parmesan cheese and stir. Let it cook a bit more.
  5. Serve: Pile the beef on a bun, top with provolone cheese and reserved peppers.
