For the Sauce:

  • 1½ cups heavy cream
  • ¾ cup low-sodium chicken broth
  • 1 cup shredded mozzarella
  • 1 cup shredded sharp cheddar
  • ¾ cup grated Parmesan (for the sauce)
  • 2 oz cream cheese, softened
  • ½ tsp Italian seasoning
  • ½ tsp dried basil
  • ¼ tsp crushed red pepper flakes (optional)

For Garnish:

  • Fresh chopped parsley

Instructions

  1. Cook the Spaghetti: Boil water, cook spaghetti until al dente, drain, toss with olive oil, and set aside.
  2. Prepare the Chicken: Season chicken with Cajun seasoning, smoked paprika, salt, and pepper. Press grated Parmesan onto chicken pieces for a light crust.
  3. Cook the Chicken: Sear chicken in a skillet with olive oil and butter until golden and cooked through. Set aside.
  4. Make the Sauce: Sauté garlic, then add cream, broth, cheeses, and seasonings. Simmer until thickened.
  5. Combine and Serve: Toss cooked spaghetti in the sauce, let it absorb flavors, plate, and top with chicken strips and parsley.
