Ingredients
Fish:
- 4 whole fish fillets (such as snapper or cod)
Vegetables:
- 2 tablespoons olive oil
- 1 lemon (zested and juiced)
- 3 cloves garlic (minced)
- 1 onion (sliced)
- 1 bell pepper (sliced)
- 1 zucchini (sliced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup fresh parsley (chopped)

Instructions
- Preheat Oven: Start by preheating your oven to 400°F (200°C).
- Prepare the Baking Dish: Lightly grease a baking dish with olive oil.
- Season the Fish: Pat the fish fillets dry with paper towels. Season both sides with salt, black pepper, and dried oregano.
