Ingredients

Main Ingredients:

  • 1 lb ground chicken
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Topping:

  • 1/3 cup marinara sauce

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Mixture: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, chopped parsley, minced garlic, and chopped onion. Mix well.
  3. Add Wet Ingredients: In a separate bowl, whisk together the egg, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper. Pour this mixture into the chicken mixture and combine until everything is well incorporated.
  4. Form the Meatloaf: Transfer the mixture to a loaf pan and shape it into a loaf. Smooth the top with a spatula.
  5. Add Marinara Sauce: Spread the marinara sauce evenly over the top of the meatloaf for added flavor and moisture.
  6. Bake: Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  7. Rest & Slice: Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps retain its moisture.
  8. Serve: Slice the meatloaf and serve with mashed potatoes or a fresh green salad, drizzling any remaining marinara sauce over the top.
