Ingredients
Base:
- 150 g Bourbon biscuits
- 45 g Unsalted butter, melted
Cheesecake Filling:
- 300 g Soft cream cheese
- 150 ml Double cream (heavy cream)
- 60 g Caster sugar
- 2 tbsp Kirsch (optional, for a boozy twist)
Topping:
- 410 g Black cherry fruit filling (tinned)
- 150 g Blackberries
- 125 g Blueberries
- Zest and juice of 1 lime
- 60 g Dark chocolate (for shavings or drizzle)
Instructions
- Prepare the Biscuit Base: Crush the Bourbon biscuits into fine crumbs. Combine with melted butter and press into pan. Chill.
- Whip Up the Cheesecake Filling: Blend cream cheese and sugar, add cream and Kirsch. Spread over base and chill.
- Prepare the Topping: Mix cherry filling, berries, lime juice, and zest. Spread over set cheesecake.
