Ingredients

Ground Italian Sausage:

1 lb.

Onion, diced:

1 small

Garlic, minced:

2 tsp

Chicken Broth:

5 cups

Water:

3 cups

Russet Potatoes, peeled and cubed:

4 cups

Kale, chopped:

1 1/2 cups

Heavy Cream:

1 cup

Salt and Pepper:

to taste

Red Pepper Flakes:

pinch

Parmesan Cheese:

for serving


Instructions

  1. Brown the sausage: In a large dutch oven or stock pot, brown the sausage until crumbled and cooked through. Set aside on a paper towel-lined plate.
  2. Cook onions and garlic: Cook onion in the same pot for 2-3 minutes, then add garlic and cook for 30 seconds.
  3. Add remaining ingredients: Return sausage to the pot, pour in chicken broth, water, and potatoes. Bring to a boil, then simmer for 10-15 minutes until potatoes are tender.
  4. Finish the soup: Stir in kale, cook for 2 minutes, then add cream, salt, pepper, and red pepper flakes. Simmer for 2 more minutes. Serve with Parmesan cheese.
