Description

This Black Pepper Udon stir-fry is a quick and flavorful dish perfect for a satisfying weeknight dinner. Tender beef slices, chewy udon noodles, and a glossy black pepper sauce come together in under 30 minutes for a bold noodle bowl that surpasses takeout quality. Ideal for fast family meals or cozy nights in.


Ingredients

FOR THE BEEF & NOODLES:

  • 8 oz flank, skirt, or sirloin steak, thinly sliced against the grain
  • 2 (7 oz) packs cooked or frozen udon noodles
  • 1 tbsp vegetable or avocado oil
  • ½ small onion, thinly sliced
  • 3 garlic cloves, minced
  • Optional: sliced scallions, sesame seeds for topping

FOR THE SAUCE:

  • 2 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce (or hoisin sauce for vegetarian version)
  • 1 tsp sugar
  • 1 tbsp cornstarch mixed with 3 tbsp water (slurry)
  • 1 tsp freshly cracked black pepper (or more to taste)
  • ½ tsp sesame oil
  • Optional: 1 tbsp rice vinegar or Shaoxing wine

Instructions

  1. Slice and Season the Beef Thinly slice the beef, lightly season with salt and pepper. Optionally, marinate with soy sauce and cornstarch.
  2. Mix the Sauce Combine soy sauce, oyster sauce, sugar, black pepper, sesame oil, and cornstarch slurry in a bowl. Set aside.
  3. Sear the Beef Brown the beef slices in a skillet, then remove and set aside.
  4. Sauté Aromatics Cook garlic and onion in the skillet until fragrant.
  5. Add Noodles & Sauce Add noodles and prepared sauce, tossing to combine and heat through.
  6. Finish with Beef Return beef to the skillet, toss until coated in sauce and heated through. Serve hot with optional toppings.
