Ingredients

  • 1 pound ground beef
  • 4 tablespoons unsalted butter, divided
  • 1 medium white onion, diced
  • ¾ cup carrots, shredded
  • ¾ cup celery, diced
  • 1 tablespoon Italian seasoning
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 large russet potatoes, peeled and cut into bite-size pieces (about 3 cups)
  • 3 cups chicken broth, low sodium
  • ¼ cup all-purpose flour
  • 4 cups sharp cheddar cheese, shredded
  • 1½ cups milk, 2%
  • ¼ cup sour cream, full fat

Instructions

  1. Cook the Ground Beef: In a 12-inch frying pan, thoroughly cook the ground beef. Drain the fat and set aside.
  2. Sauté Vegetables: In a large pot, sauté onion, carrots, and celery with seasonings until onions have softened.
  3. Add Ingredients: Add beef, potatoes, and chicken broth to the pot. Simmer until potatoes are tender.
  4. Make Roux: Melt butter, stir in flour, and add to the soup.
