Description
Slow Cooker Butter Chicken is a rich and creamy authentic Indian dish made easy in the crock pot. Tender chicken is coated in a mildly spicy tomato-tinged sauce and cooks itself in one pot.
Ingredients
For the Chicken:
- 3 pounds (5-6 large) boneless, skinless chicken breasts
For the Sauce:
- 1 cup (1 small) onion, diced
- 4 tbsp unsalted butter
- 1 cup tomato sauce
- 1¼ cups heavy cream, room temperature & divided
- 6 tbsp tomato paste
- 1 tbsp minced garlic
- 1 tbsp grated ginger
- 2½ tsp curry powder
- 2 tsp chili powder
- 2 tsp garam masala
- ½ tsp cumin
- ½ tsp salt
- 2 tbsp cornstarch
- Fresh cilantro for garnish
Instructions
- Sauté the Aromatics: In a sauté pan, melt the butter and sauté onions, garlic, ginger, and spices until fragrant.
- Blend the Sauce: In a blender, blend the cooked onions and spices with tomato sauce, paste, and ¾ cup cream until smooth.
- Cook in Slow Cooker: Place chicken in the slow cooker, cover with sauce, and cook on high for 2 ½ – 3 hours.
- Thicken the Sauce: Remove chicken, cut into pieces, thicken sauce with cream-cornstarch slurry, then return chicken to coat.
- Serve: Serve chicken over rice, garnished with cilantro.
