Description

Slow Cooker Butter Chicken is a rich and creamy authentic Indian dish made easy in the crock pot. Tender chicken is coated in a mildly spicy tomato-tinged sauce and cooks itself in one pot.


Ingredients

For the Chicken:

  • 3 pounds (5-6 large) boneless, skinless chicken breasts

For the Sauce:

  • 1 cup (1 small) onion, diced
  • 4 tbsp unsalted butter
  • 1 cup tomato sauce
  • 1¼ cups heavy cream, room temperature & divided
  • 6 tbsp tomato paste
  • 1 tbsp minced garlic
  • 1 tbsp grated ginger
  • 2½ tsp curry powder
  • 2 tsp chili powder
  • 2 tsp garam masala
  • ½ tsp cumin
  • ½ tsp salt
  • 2 tbsp cornstarch
  • Fresh cilantro for garnish

Instructions

  1. Sauté the Aromatics: In a sauté pan, melt the butter and sauté onions, garlic, ginger, and spices until fragrant.
  2. Blend the Sauce: In a blender, blend the cooked onions and spices with tomato sauce, paste, and ¾ cup cream until smooth.
  3. Cook in Slow Cooker: Place chicken in the slow cooker, cover with sauce, and cook on high for 2 ½ – 3 hours.
  4. Thicken the Sauce: Remove chicken, cut into pieces, thicken sauce with cream-cornstarch slurry, then return chicken to coat.
  5. Serve: Serve chicken over rice, garnished with cilantro.
