Ingredients
Chicken Gnocchi Soup:
- 1 lb chicken breasts
- 2 cups matchstick carrots
- 1 cup diced onion
- 2 stalks celery, diced
- 3 cloves garlic
- 3 ½ TB Italian seasoning
- 4 cups chicken stock
- 1 lb potato gnocchi
- 2 cups heavy cream
- 2 cups fresh baby spinach
- 1 ½ cups shredded Parmesan
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Chop the vegetables, garlic, and chicken as needed.
- Combine Ingredients: In the slow cooker, add chicken, carrots, onion, celery, garlic, Italian seasoning, and chicken stock. Cook on low for 6 hours.
- Add Gnocchi and Cream: Stir in the gnocchi, heavy cream, spinach, and Parmesan. Cover and cook for an additional 30 minutes.
- Season and Serve: Season with salt and pepper. Serve hot, garnished with extra Parmesan if desired.
Notes
- This soup can be easily customized with your favorite vegetables or herbs.
- For a thicker soup, you can add a cornstarch slurry towards the end of cooking.
