These Slow Cooker Queso Chicken Tacos are a delicious and easy-to-make meal that will quickly become a family favorite. Tender shredded chicken cooked in a cheesy queso sauce with just the right amount of spice, perfect for filling tacos, burrito bowls, nachos, or topping salads.
Ingredients
Chicken:
- 2 pounds boneless skinless chicken breasts
Taco Seasoning:
- 1 ounce taco seasoning (1 envelope)
Rotel Diced Tomatoes:
- 10 ounce Rotel diced tomatoes with green chilies (1 can)
Queso Cheese Dip:
- 15 ounces queso cheese dip (1 jar)
Instructions
- Prepare the Chicken: Place the chicken breasts in the slow cooker, sprinkle with taco seasoning, and top with Rotel.
- Cook the Chicken: Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and shreds easily.
- Add Queso: Remove excess liquid, shred the chicken, stir in queso, and cook for an additional 15 minutes.
- Serve: Enjoy over rice or in tortillas with your favorite toppings.
Notes
- Do NOT drain the Rotel when adding to the slow cooker. Drain excess liquid after cooking.
- Store leftovers in the refrigerator for up to 3 days.
