Description

Ingredients

Dry Ingredients:

  • 2 and 3/4 cups all-purpose flour, spooned and leveled
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 3/4 cups unsalted butter, softened to room temperature
  • 1 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 1/3 cup white sugar or coarse sugar for rolling

Instructions

  1. Preheat and prep: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix the dry ingredients: In a large bowl, sift together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. Cream wet ingredients: In a separate bowl, beat the butter and brown sugar until fluffy. Add the molasses, vanilla, and egg, and beat until combined.
  4. Combine and chill dough: Gradually mix in the dry ingredients until just combined. Refrigerate the dough for 30 minutes.
  5. Shape and coat: Roll the dough into balls, then coat each ball in sugar.
  6. Arrange and bake: Place the dough balls on the baking sheets and bake for 8-10 minutes.
  7. Cool and serve: Let the cookies cool on the baking sheet before transferring to a wire rack to cool completely.
