Grilled corn on the cob coated in a zesty Cajun cream, topped with cheese, herbs, and a squeeze of lime for a spicy and creamy twist on a classic summer favorite.

Ingredients

Main Ingredients

  • 4 ears corn, husked
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Creamy Cajun Coating

  • 4 tablespoons mayonnaise (vegan or regular)
  • 80 millilitres sour cream or Mexican crema
  • 1.5 teaspoons Cajun seasoning
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Toppings

  • 1 tablespoon fresh cilantro, finely chopped
  • 60 grams feta or cotija cheese, crumbled
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chipotle powder or chili powder (optional)

Instructions

  1. Preheat the Grill: Heat the grill to medium-high for roasting the corn.
  2. Prepare the Corn: Brush corn with olive oil, season with salt and pepper, then grill for 10-15 minutes until charred and tender.
  3. Make the Cajun Cream Sauce: Whisk together mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth.
  4. Coat the Corn: Brush the grilled corn with the Cajun cream sauce.
  5. Add Toppings: Sprinkle crumbled cheese, cilantro, lime juice, and chipotle or chili powder over the corn.
  6. Serve: Serve the corn while warm for the best flavor.

Notes

  • Select fresh, high-quality corn for the best results.
  • Ensure spices are fresh for optimal flavor.
  • Leftover corn can be stored in the refrigerator and reheated later.
  • The lime juice adds a refreshing acidity to the dish.
