Description

Ingredients

    Cucumbers:

  • 4 Persian cucumbers, ends removed and cut into ½ inch chunks
  • Onion:

  • Seasonings:

  • 1 tablespoon gochugaru (Korean chili flakes)
  • 1 tablespoon sesame seeds
  • 2 teaspoons soy sauce
  • ½ teaspoons sesame oil
  • 1 teaspoon rice vinegar
  • ½ teaspoon sugar

Instructions

  1. Prepare Dressing: In a medium-sized bowl, whisk together gochugaru, soy sauce, sesame oil, sesame seeds, rice vinegar, and sugar.
  2. Add Vegetables: Add the chopped cucumbers and onion to the bowl with the dressing.
  3. Toss Salad: Toss the cucumbers and onion in the dressing until evenly coated.
  4. Adjust Seasoning: Taste the salad for seasoning and adjust as necessary. Add sliced green onions if desired.
