Description

A flavorful and colorful dish featuring spicy jerk chicken served on a bed of refreshing mango slaw, topped with a creamy honey lime dressing. These jerk chicken & mango slaw bowls are a perfect balance of heat, sweetness, and freshness.


Ingredients

For the Jerk Chicken:

  • 4 chicken thighs, boneless and skinless
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil

For the Mango Slaw:

  • 1 mango, diced
  • 2 cups cabbage, shredded
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped

For the Honey Lime Cream:

  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Rub the chicken thighs with jerk seasoning and olive oil.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  3. In a large bowl, combine the mango, cabbage, red bell pepper, and cilantro.
  4. In a separate bowl, whisk together the mayonnaise, honey, lime juice, salt, and pepper.
  5. Pour the dressing over the slaw and toss to combine.
  6. Once the chicken is cooked, slice it and serve it over the mango slaw.
  7. Drizzle with additional honey lime cream if desired.

Notes

  • For a spicier kick, add more jerk seasoning to the chicken.
  • This dish can be served warm or cold.
