Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts

Mushroom Filling:

  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Additional:

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken: Cut a pocket into each chicken breast without cutting all the way through. In a bowl, mix together the mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper. Stuff each chicken breast with the mushroom mixture.
