Ingredients
Ground Beef Mixture:
- 1.5 pounds ground beef
- 1 chopped onion
- 1 package taco seasoning mix plus water indicated on package
- 1 10 ounce can Rotel, not drained
- 1 2.25 ounce can sliced black olives
- 1 15 ounce can corn, drained
Layering:
- 4 taco-size flour tortillas
- 2 cups cheddar cheese, divided
Instructions
- Preheat oven: Preheat the oven to 350 degrees Fahrenheit.
- Cook Ground Beef Mixture: In a skillet, cook the ground beef and onions until beef is browned and onions are tender. Stir in the taco seasoning and water; cook for 8-10 minutes. Mix in Rotel, olives, and corn; cook for another 2-3 minutes.
- Layer Casserole: Spray a 9×13 dish with nonstick spray. Place tortillas on the bottom, spread half of the meat mixture, sprinkle one cup of cheese. Repeat with another layer of tortillas, remaining meat, and the last cup of cheese.
- Bake: Bake at 350 degrees for about 20 minutes or until bubbly.
- Serve: Serve with sour cream and your favorite taco toppings.
