Description

This Taco Bake casserole is a delicious and quick dinner option that the whole family will love. With layers of seasoned ground beef, corn, olives, and gooey cheddar cheese, this dish is a comforting and satisfying meal that can be on the table in just about 30 minutes!


Ingredients

Ground Beef Mixture:

  • 1.5 pounds ground beef
  • 1 chopped onion
  • 1 package taco seasoning mix plus water indicated on package
  • 1 10 ounce can Rotel, not drained
  • 1 2.25 ounce can sliced black olives
  • 1 15 ounce can corn, drained

Layering:

  • 4 taco-size flour tortillas
  • 2 cups cheddar cheese, divided

Instructions

  1. Preheat oven: Preheat the oven to 350 degrees Fahrenheit.
  2. Cook Ground Beef Mixture: In a skillet, cook the ground beef and onions until beef is browned and onions are tender. Stir in the taco seasoning and water; cook for 8-10 minutes. Mix in Rotel, olives, and corn; cook for another 2-3 minutes.
  3. Layer Casserole: Spray a 9×13 dish with nonstick spray. Place tortillas on the bottom, spread half of the meat mixture, sprinkle one cup of cheese. Repeat with another layer of tortillas, remaining meat, and the last cup of cheese.
  4. Bake: Bake at 350 degrees for about 20 minutes or until bubbly.
  5. Serve: Serve with sour cream and your favorite taco toppings.
