Description

This Taco Bell Beefy Melt Burrito is a homemade version of the beloved fast-food classic. It layers seasoned ground beef, refried beans, Mexican rice, melted cheese dip, fresh sour cream, and crunchy Fritos all wrapped in a warm flour tortilla for the ultimate Tex-Mex experience.


Ingredients

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • ¼ cup water or beef broth
  • 1 cup refried beans (optional)
  • 2 cups cooked Mexican rice (or instant)
  • 4 large burrito-sized flour tortillas
  • 2 cups Fritos corn chips (or Doritos)
  • 1 cup warm cheese dip (like orange nacho cheese)
  • 1 cup shredded Mexican cheese blend
  • ½ cup sour cream
  • Salsa (optional, for serving)

Instructions

  1. Brown the ground beef in a sauté pan, breaking it up until no pink remains.
  2. Stir in taco seasoning and water, cook for another minute, then fold in the refried beans, adding extra water if it seems too thick.
  3. Meanwhile, heat the tortillas in the microwave for about 30 seconds and warm the Mexican rice.
  4. Lay a tortilla flat, and layer a few tablespoons of the beef-bean mixture, then rice, a handful of Fritos, a spoonful of cheese dip, shredded cheese, and sour cream.
  5. Fold in the sides, roll it tightly into a burrito, and repeat with the rest.
  6. Finish them in a hot skillet for a minute on each side to toast the tortilla and melt everything inside.

Notes

  • You can swap ground chicken or turkey for beef for a lighter version.
  • For extra veggie power, try adding sautéed onions, peppers, or corn.
  • To add heat, mix jalapeños into the beef or top with hot sauce.
  • Store leftovers in an airtight container in the fridge for up to 5 days (without Fritos if reheating).
  • Freeze burritos (without Fritos) for up to 3 months. Reheat by thawing and microwaving or baking.
