Description

This easy Taco Soup is a one-pot meal full of seasoned beef, beans, tomatoes, and corn—ready in 30 minutes and perfect for busy weeknights.


Ingredients

Ground Beef Mixture:

  • ½ tablespoon olive oil
  • pounds ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 package taco seasoning
  • ½ cup green pepper, diced

Soup Base:

  • 2 cups beef broth
  • 1½ cups frozen corn
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 15 ounces can tomato sauce
  • 10 ounces Rotel tomatoes
  • 4 ounces green chilies
  • 1 cup water (optional)

Instructions

  1. Brown the Ground Beef: In a large soup pan, drizzle olive oil and brown the ground beef with onions until no pink remains. Drain off any excess fat.
  2. Add Seasonings: Stir in garlic and taco seasoning, cooking for one minute.
  3. Combine Ingredients: Add the rest of the ingredients to the pot and bring to a boil. Adjust soup thickness by adding water as desired.
  4. Simmer: Reduce heat and simmer for 25-30 minutes.
  5. Serve: Top with favorite toppings before serving.
