This easy Taco Soup is a one-pot meal full of seasoned beef, beans, tomatoes, and corn—ready in 30 minutes and perfect for busy weeknights.
Ingredients
Ground Beef Mixture:
- ½ tablespoon olive oil
- 1½ pounds ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 package taco seasoning
- ½ cup green pepper, diced
Soup Base:
- 2 cups beef broth
- 1½ cups frozen corn
- 1 can black beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 15 ounces can tomato sauce
- 10 ounces Rotel tomatoes
- 4 ounces green chilies
- 1 cup water (optional)
Instructions
- Brown the Ground Beef: In a large soup pan, drizzle olive oil and brown the ground beef with onions until no pink remains. Drain off any excess fat.
- Add Seasonings: Stir in garlic and taco seasoning, cooking for one minute.
- Combine Ingredients: Add the rest of the ingredients to the pot and bring to a boil. Adjust soup thickness by adding water as desired.
- Simmer: Reduce heat and simmer for 25-30 minutes.
- Serve: Top with favorite toppings before serving.
