Ingredients
Dry Ingredients:
- 1½ cups + 1 tbsp flour
- 2 tsp baking powder
- ½ tsp salt
Wet Ingredients:
- 3 eggs
- 1 cup sugar
- 1 cup yogurt (or sour cream)
- ½ tsp vanilla
- ½ cup oil
- 2 tsp lemon zest
- 1½ cups blueberries (tossed with 1 tbsp flour)
Lemon Glaze:
- 2–3 tbsp lemon juice
- 1 cup powdered sugar
Instructions
- Mix dry ingredients: Combine flour, baking powder, and salt in a bowl.
- Prepare wet ingredients: In a separate bowl, beat eggs and sugar. Add yogurt, vanilla, oil, and lemon zest.
- Combine wet and dry ingredients: Fold in the dry mixture into the wet mixture. Gently fold in the floured blueberries.
- Bake: Pour the batter into a greased 9×5 loaf pan and bake at 350°F for 50–55 minutes.
- Make the glaze: Mix lemon juice and powdered sugar to make the glaze. Drizzle it over the warm loaf.
