Description

Ingredients

Dry Ingredients:

  • 1½ cups + 1 tbsp flour
  • 2 tsp baking powder
  • ½ tsp salt

Wet Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 1 cup yogurt (or sour cream)
  • ½ tsp vanilla
  • ½ cup oil
  • 2 tsp lemon zest
  • 1½ cups blueberries (tossed with 1 tbsp flour)

Lemon Glaze:

  • 23 tbsp lemon juice
  • 1 cup powdered sugar

Instructions

  1. Mix dry ingredients: Combine flour, baking powder, and salt in a bowl.
  2. Prepare wet ingredients: In a separate bowl, beat eggs and sugar. Add yogurt, vanilla, oil, and lemon zest.
  3. Combine wet and dry ingredients: Fold in the dry mixture into the wet mixture. Gently fold in the floured blueberries.
  4. Bake: Pour the batter into a greased 9×5 loaf pan and bake at 350°F for 50–55 minutes.
  5. Make the glaze: Mix lemon juice and powdered sugar to make the glaze. Drizzle it over the warm loaf.
